Austin Oyster Co. started as a pandemic-era pop-up, serving East Coast oysters around Austin before eventually settling into a brick-and-mortar in East Austin. The restaurant brings the charm of a classic New England oyster bar to Texas, almost explicitly through illustrations of oysters sporting Willie-style braids. The identity plays in that space between the two — old-school coastal details, weathered textures, and the grit of Texas.
